Quick & Healthy Beef & Egg Fried Rice

Not sure what to have for dinner tonight?
The best part about this dish it's not only delicious and quick it's also HEALTHY! And you know what that means, you can enjoy it the fullest and still go back for seconds.
I also used brown rice and quinoa because it's great sauce of fibre and protein but adds a really nice flavour to the fried rice 🍚
Prep time: 10 mins Cook time: 3o mins
Total time: 40 mins Serves: 4- 5 people

Utensils:
2 chopping boards- 1 for the meat & 1 for the veg
bowl
Wok or fry pan
Saucepan - cooking rice
Mixing spoon
Fork
Serving spoon
2 knives - 1 for meat & 1 for veg
Ingredients:
1 brown onion - finely chopped
4 garlic cloves - peeled and chopped or minced
1 carrot - finely chopped
1 cup beans - finely chopped
1 cup of peas & corn
2 spring onions- chopped
Salt & pepper
Soy sauce
1 tsp mince garlic
1 tbsp of butter
Oil
2 eggs
Rice:
2 cups of brown rice & quinoa (you can use any type of rice)
3 cups of water
Pinch Steps:
Cooking Brown Rice & Quinoa:
Pinch 1: Add 3 cups of water to the saucepan and 2 cups of rice to the water. Cook on a high for 10 mins then on low for the remaining. Water will start absorbing and turn into fluffy rice. Tip: You want about 2cms of water above the rice.

Fried Rice:
Pinch 1: Prepare all ingredients, chop all vegetables and meet including garlic and onion.
Tip: Cut all vegetables first, then on another cutting board cut the meat and leave the garlic and onion last so you are not having to cry all over your vegetables.
Pinch 2: Preheat your wok on a medium heat, add butter and oil.
Pinch 3: Once the butter has melted add your onion, bacon and 1/2 of your garlic to the pan. Let cook and brown for about 3 minutes.
Pinch 4: Add meat to the onion, bacon and garlic mix with salt and pepper. Add a spash of soy sauce. Tip: Meat loves salt so do not be shy.
Pinch 5: Once meat is brown add all vegetables and give it a big stir to coat all those vegetables. Again add a splash of soy sauce. Vegetables take a little awhile to soften so let still for about 15 mins and you can use a lid to help speed up the process.
Egg mixture: Pinch 6: Time to add the egg so make up in a bowl two eggs, tsp of mince garlic salt and pepper and give it a good whisk.
Pinch 7: Add egg to the pan and let sit so don't stir it just yet give it a couple of minutes to cook.
Pinch 8: Once egg is cooked and all liquids has been soaked up add 1 cup of rice with a splash of soy and give it a good stir. Then add your other cup of rice again more soy sauce and salt/peeper. Tip: You can always add but not take away, so don't rush by adding all your rice to the pan straight away. You can also use any rice that you like will still taste delicious.
