Cheesy Crunchy Rosti (Hashbrown)

A delicious giant hashbrown also is known as a rosti. Rosti mean's "crips and golden".

Perfect side dish for breakfast or even dinner. If you don't want a giant one just make little patties that are perfect for kids.


Ingredients:

  • 2 potatoes (peeled and grated)

  • 1 cup bacon pieces

  • 1 cup of grated cheddar cheese

  • Spring onions (chopped)

  • Oil

  • Pinch of salt and pepper

















Utensils:

  • Frypan (non-stick)

  • Spatula

Pinch Steps: (Photo below)

Pinch 1: Peel and grate potatoes. Then place into a tea towel and squeeze all water out of the potatoes, till dry.

Pinch 2: On medium-high heat add a little oil to fry pan, add bacon pieces till nice a crispy.

Pinch 3: Remove bacon from fry pan, add extra oil. Add half of the grated potato to the pan evenly.

Pinch 4: Top with cheese, bacon, shallots, salt and pepper. Then remaining potato on top.

Pinch 5: Once you see the sides browning it's ready to flip. Once flipped add little oil around the side to stop from sticking. Cook for six to eight minutes till cooked all the way through and it should be nice and golden brown.


Tips and tricks:

- Make sure you don't rinse the potato after you grate it. This will wash away the starch, which helps bind the mixture.
