Chicken Cabarona with cherry tomatoes and spinach

Perfect carbs night meal! So delicious with tender chicken chunks coated in creamy garlic sauce with an extra pinch of cherry tomatoes and spinach for freshness.

Even better the next day!


Prep time: 15 mins Cook time:40 mins

Total time: 55mins Serves: 6 people



Utensils:

Knife

Bowl

2x cutting boards

Saucepan (Pasta)

Large saucepan or pot

Spatula

Fork

Ingredients:

3 Chicken thighs (can use breasts as well) - cut into chunks

1 brown onion - finely chopped

3 garlic cloves -minced or finely chopped

1 celery stalk - finely chopped

2 spring onions -finely chopped

3 tblsp butter (is the key to all the yummy flavours)

Punnett of cherry tomatoes -cut in halves

Spinach

2x Dolmio Carbonara pasta sauce (cream works well if unable to get this sauce)

Pasta (you choose)


Pinch steps: PHOTO BELOW

Pinch 1: Cook pasta first. Add two cups of water to a saucepan with a tablespoon of butter and a pinch of salt and let come to a boil. Once boiling add pasta and stir occasionally at the start to stop the pasta from sticking.

Pinch 2: Add a tablespoon of butter to your large saucepan or pot and let melt. Add a pinch of garlic and chicken to the pan. Let the chicken cook until all white then remove chicken from pan to a bowl and set aside.

CHECK ON PASTA. Once cooked drain and place aside.

Pinch 3: After chicken has been cooked the pan should have all chicken flavours and juices in the bottom of the pan. Add more garlic following by butter, onion, celery, spring onions and bacon. Cook until soft. I do like to add about a tablespoon of water to the pan if the mixture seems a little dry because I don't want the ingredients to fry. Season with salt and pepper.

Pinch 4: After about 15 minutes add the chicken back to the pan including all liquid in the bottom of the bowl. Give it a good stir and let the chicken cook through. Flavour! Add salt and pepper.

Pinch 5: Once the chicken is cooked add the dolmio sauce and stir. Let simmer on low for 10 minutes then add your cooked pasta with cherry tomatoes and spinach. Give it a good stir adding seasoning and serve with melted cheese on top.
