Three Ingredient Fluffy Banana Pancakes

Super easy & super delicious! WINNER.

I have been making these pancakes for a while now, and to be honest nearly every morning.

It makes breakfast quick and simple but so enjoyable.

Topped mine with honey, strawberries and honey glazed bananas......yum yum.

I do have spot for strawberries so I couldn't resist and I put them through my pancake stack to have them with every bite.


Prep Time: 5 mins Cook Time: 10 mins

Total time: 15 mins Serves: 10

Utensils:

Mixing bowl

Spoon or ladle

Frying pan

Ingredients:

2 banana’s - Riper the banana the sweeter the pancakes.

2 eggs

Oil for pan

1 cup of self raising flour (if you don't have raising flour you can make your own, recipe below)


Self-raising flour ingredients:

1 cup of flour

1 1/2 tsp baking powder

1 pinch of salt

Pinch Steps:

Pinch 1: Mash the ripe bananas into a mixing bowl. If the bananas are little firm just pop them into the microwave for 30 seconds. They will become softer.

Pinch 2: Whisk in the eggs

Pinch 3: Add the self raising flour, make sure no lumps remain.

Pinch 4: Put your frying pan on a low-medium heat with a touch of oil to grease the pan. Place circles of pancakes into the pan and wait one minute or for the bubbles to form on the surface then flip. Repeat until batter is cooked.


Toppings:

Honey Glazed Banana Recipe:

Pinch 1: Thinly slice bananas.

Pinch 2: heat up a small pan on low heat and a tablespoon of honey.

Pinch 3: Add the sliced banana and leave to caramelise for a minute. Flip after a minute. (The longer you leave them in the pan the softer and mushy they will get.

Pinch 4: Serve over warm Banana pancakes.

  • Honey/maple syrup

Tips & Tricks to create banana pancakes:

1. You should only flip your pancakes once.

2. Use a plastic flexible spatula. Do not use a metal spatula it won't be flexible as plastic.

3. BIGGEST TIP: Use olive oil, butter can easily burn on the stove, but olive oil gives pancakes nice, crispy edges without burning.

4. The trick to fluffy pancakes is a thick batter. If the pancake batter you're working with is runny add more flour.
